Ingredients

  • 1 pound regular or hot breakfast sausage cooked and crumbled
  • 30 ounces frozen tater tots
  • 2 cups shredded Mexican blend cheese or cheddar cheese divided
  • 8 large eggs
  • 1 cup milk
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon granulated garlic or garlic powder
  • ½ teaspoon onion powder

Equipment

  • large skillet
  • 9×13 baking dish
  • medium bowl
  • Whisk

Method

  1. Preheat the oven: Set your oven to 350°F and lightly grease a 9×13 baking dish with butter or nonstick spray.
  2. Cook the sausage: In a large skillet over medium-high heat, cook and crumble the sausage until browned. This should take about 5–7 minutes. Drain any excess grease if necessary.
  3. Assemble the casserole: Add frozen tater tots, cooked sausage, and 1½ cups of shredded cheese to the baking dish. Toss gently to combine.
  4. Prepare the egg mixture: In a medium-sized bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and onion powder.
  5. Layer the casserole: Pour the egg mixture evenly over the tater tots, sausage, and cheese. Sprinkle the remaining ½ cup of cheese on top for that golden, cheesy crust.
  6. Bake: Place the dish in the oven and bake for 55–60 minutes, or until the eggs are fully set and the edges are golden brown. If you're unsure, check with a knife—it should come out clean!
  7. Serve: Let the casserole cool for 5 minutes before slicing and serving. Enjoy it warm and watch it disappear!

Notes

Customizations: Swap sausage for ham, bacon, or turkey sausage, keeping 1 pound of cooked protein. Make-ahead tip: Assemble the casserole the night before, refrigerate covered, and bake as directed in the morning. Freezer tips: Freeze cooked portions for busy mornings and reheat in the microwave for 2–3 minutes. Add diced bell peppers or onions to boost flavor and nutrition!
