- In a small bowl, whisk together the soy sauce, brown sugar, and 1/2 cup water until the sugar is dissolved. Stir in the minced garlic, grated ginger, and sesame oil. Set the sauce aside.
- Place the beef roast and sliced green onions (reserve some for garnish) into your slow cooker. Pour the sauce over the beef and stir lightly to combine.
- Cook on HIGH for 4 hours or LOW for 8 hours. The beef should be incredibly tender and easy to shred with a fork.
- In a small cup, dissolve the cornstarch in 2 tablespoons of water. Stir this slurry into the slow cooker. Let the sauce thicken for about 10 minutes while the slow cooker remains on.
- Turn off the heat, garnish with sesame seeds and the reserved green onions, and serve over rice or steamed veggies.

Shredded Chicken Option: Swap beef for chicken thighs for a leaner alternative that’s just as delicious.
