- In a small mixing bowl, whisk together the heavy cream, chicken broth, minced garlic, salt, and pepper.
- Spray your slow cooker with non-stick spray to prevent sticking.
- Layer the bottom of your slow cooker with a third of the potato slices.
- Drizzle a third of the cream mixture over the potatoes and sprinkle with a third of the cheddar and parmesan cheeses.
- Repeat the layering process two more times until all ingredients are used.
- Cover and cook on high for 3-4 hours, or until the potatoes are fork-tender.
- Garnish with fresh parsley if desired and serve immediately!
