Ingredients
  

  • 1 cup heavy whipping cream
  • 1/4 cup chicken broth
  • 3 lbs. russet potatoes, peeled and sliced approx. 1/4” thick
  • 2 tsp minced garlic
  • 1/2 cup shredded parmesan cheese
  • 2 1/2 cups shredded cheddar cheese
  • 1 tsp salt
  • 1 tsp pepper

Method
 

  1. In a small mixing bowl, whisk together the heavy cream, chicken broth, minced garlic, salt, and pepper.
  2. Spray your slow cooker with non-stick spray to prevent sticking.
  3. Layer the bottom of your slow cooker with a third of the potato slices.
  4. Drizzle a third of the cream mixture over the potatoes and sprinkle with a third of the cheddar and parmesan cheeses.
  5. Repeat the layering process two more times until all ingredients are used.
  6. Cover and cook on high for 3-4 hours, or until the potatoes are fork-tender.
  7. Garnish with fresh parsley if desired and serve immediately!
