Ingredients
  

  • 1 tbsp olive oil
  • 6 medium turkey sausage links
  • 3 large bell peppers, cut into strips
  • 1 large onion, sliced into half moons
  • 6 cloves garlic, minced
  • 1 tbsp Italian seasoning
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
  • 1 1/2 cups marinara sauce

Method
 

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the sausage links and cook for about 2 minutes per side, just until browned. (Don’t worry about cooking them through—they’ll finish in the slow cooker.)
  3. In your slow cooker, combine the bell peppers, onions, garlic, Italian seasoning, salt, and pepper. Toss everything to coat evenly.
  4. Pour the marinara sauce over the vegetable mixture.
  5. Once the sausages are browned, place them on top of the peppers and onions in the slow cooker.
  6. Cover and cook on Low for 4-5 hours or on High for 2-3 hours, until the sausages are cooked through and everything is tender.

Notes

Don’t skip browning the sausages: It’s an extra step, sure, but it deepens the flavor and adds a little caramelization.
Cut peppers and onions thicker: Aim for a bit wider than 1/4 inch to avoid mushy veggies.
Add cheese: Sprinkle mozzarella or Parmesan over everything in the last 15 minutes of cooking for a gooey, cheesy topping.
Use leftover sauce: Drizzle the extra liquid over pasta or rice for a flavorful side dish.
Meal prep friendly: Store leftovers in individual containers for grab-and-go lunches.
