- Heat the olive oil in a large skillet over medium-high heat.
- Add the sausage links and cook for about 2 minutes per side, just until browned. (Don’t worry about cooking them through—they’ll finish in the slow cooker.)
- In your slow cooker, combine the bell peppers, onions, garlic, Italian seasoning, salt, and pepper. Toss everything to coat evenly.
- Pour the marinara sauce over the vegetable mixture.
- Once the sausages are browned, place them on top of the peppers and onions in the slow cooker.
- Cover and cook on Low for 4-5 hours or on High for 2-3 hours, until the sausages are cooked through and everything is tender.
Notes
Don’t skip browning the sausages: It’s an extra step, sure, but it deepens the flavor and adds a little caramelization.
Cut peppers and onions thicker: Aim for a bit wider than 1/4 inch to avoid mushy veggies.
Add cheese: Sprinkle mozzarella or Parmesan over everything in the last 15 minutes of cooking for a gooey, cheesy topping.
Use leftover sauce: Drizzle the extra liquid over pasta or rice for a flavorful side dish.
