Ingredients
  

  • 1 lb. breakfast turkey sausage, browned and drained
  • 8 oz. diced fire-roasted green chiles (two 4-oz. cans), drained very well
  • 1/2 cup sliced green onion, plus more for serving
  • 2 1/2 cups shredded sharp cheddar cheese, divided
  • 10 eggs
  • 1/2 cup sour cream
  • 1/4 tsp. salt
  • 1/8 tsp. pepper

Method
 

  1. Spray your slow cooker generously with non-stick spray to prevent sticking.
  2. In the slow cooker, layer the browned sausage evenly. Sprinkle 1 cup of shredded cheese, the drained green chiles, and sliced green onions over the sausage.
  3. In a mixing bowl, whisk together the eggs, sour cream, salt, and pepper until smooth.
  4. Pour the egg mixture over the ingredients in the slow cooker.
  5. Cover the slow cooker and cook on HIGH for 2 hours and 15 minutes. Avoid lifting the lid during cooking—this is crucial for the eggs to set properly.
  6. Once done, sprinkle the remaining 1.5 cups of cheese over the top. Cover and let sit for 5 minutes to melt the cheese.
  7. Garnish with additional green onions if desired. Serve warm and enjoy!
