Ingredients
  

  • 2 lbs. russet potatoes, thinly sliced (about 8 small potatoes)
  • 1/4 tsp. garlic powder
  • 1/4 tsp. pepper
  • 1 oz. packet Lipton Onion Soup Mix
  • 1/3 cup olive oil

Method
 

  1. Spray the slow cooker with non-stick spray.
  2. Add the potatoes to the slow cooker in a spiral design if desired.
  3. Sprinkle over the garlic powder, pepper, and onion soup mix.
  4. Drizzle olive oil evenly over the potatoes.
  5. Cover and cook on HIGH for 4 hours without opening the lid during the cooking time.

Notes

The potatoes will crisp slightly on the edges but remain tender in the middle. Turn your slow cooker to "keep warm" if serving later. If you don’t have olive oil, melted butter works as a great substitute.
