  • 1 medium onion, sliced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 8 lamb loin chops (about 1-3/4 pounds)
  • 2 garlic cloves minced

Method
 

  1. Slice the onion and place it evenly in the base of your 3-quart slow cooker.
  2. In a small bowl, mix the oregano, thyme, garlic powder, salt, and pepper. Sprinkle the mixture generously over both sides of the lamb chops.
  3. Arrange the seasoned chops over the onion layer. Top with minced garlic.
  4. Cover the slow cooker with the lid and set it to cook on low for 4-6 hours. Walk away and let the slow cooker do its thing.
  5. Check for tenderness after 4 hours. When the meat pulls apart easily with a fork, it’s ready to serve.
