Method
- Slice the onion and place it evenly in the base of your 3-quart slow cooker.
- In a small bowl, mix the oregano, thyme, garlic powder, salt, and pepper. Sprinkle the mixture generously over both sides of the lamb chops.
- Arrange the seasoned chops over the onion layer. Top with minced garlic.
- Cover the slow cooker with the lid and set it to cook on low for 4-6 hours. Walk away and let the slow cooker do its thing.
- Check for tenderness after 4 hours. When the meat pulls apart easily with a fork, it’s ready to serve.
