Method
- Add molasses, vegetable oil, soy sauce, peeled garlic, fresh ginger (cut into chunks), cinnamon, allspice, thyme, nutmeg, and the serrano (if using for extra heat) to a blender. Blend until smooth to create your jerk marinade.
- Place the chicken pieces in the slow cooker, arranging them snugly in an even layer. Pour 2/3 of the marinade over the chicken and spread it evenly using your hands. Reserve the remaining marinade.
- Cut the onion into wedges and the orange into slices. Nestle these, along with the sliced serrano (optional), beneath and around the chicken in the slow cooker.
- Cover with the lid and set the slow cooker to High. Cook undisturbed for 4 hours.
- After 4 hours, transfer the chicken carefully to a foil-lined baking sheet using tongs—the meat will be fall-apart tender!
- Spread the reserved marinade on top of the chicken. Place the baking sheet under the broiler (4-5 inches from the heat source) and broil for about 5 minutes, or until the skin is crisp and lightly charred. Keep a close watch to avoid burning.
