Ingredients

  • 750 g Lean mince
  • 3 tsp Onion granules
  • 3 tsp Garlic granules
  • 3 tsp Ground cumin
  • 3 tsp Paprika
  • 2 tsp Dried oregano
  • 1 tsp Sea salt
  • 1/2 tsp Freshly ground black pepper
  • 1 Bulb of garlic
  • 75 g Mayo
  • 100 g Greek yoghurt
  • 2 tsp Mint sauce

Method

  1. Mix the meat: Combine all meat mix ingredients in a bowl. Knead with your hands until smooth and fully combined.
  2. Shape and wrap: Form the meat into a log shape on tin foil. Roll tightly and twist the ends like a candy wrapper to seal.
  3. Prep the garlic: Wrap the unpeeled bulb of garlic in foil.
  4. Slow cooker method: Place the wrapped meat and garlic into the slow cooker. Prick the meat a few times with a knife. Cook on HIGH for 3–4 hours or LOW for 5–6 hours. Test with a meat thermometer—it should read 70°C/160°F.
  5. Air fryer method: Put the wrapped meat and garlic in the air fryer. Cook at 170°C/325°F for 30 minutes, then remove the garlic and open the foil on top of the meat. Cook for an additional 15 minutes until browned.
  6. Cool and slice: Let the meat cool for 15–30 minutes before slicing thinly.
  7. Make the sauce: Squeeze the roasted garlic from its skin and mix thoroughly with mayo, yoghurt, and mint sauce.

Notes

For best results, save the cooking juices and drizzle them over the sliced meat to keep it moist and flavorful.
