- Place the whole peeled tomatoes, tomato sauce, broth, onion, garlic, salt, and Italian seasoning into your slow cooker.
- Cover and cook on low for 6-8 hours or high for 3-4 hours. During this time, your kitchen will smell amazing as all the flavors meld together.
- Once cooked, puree the soup. Use an immersion blender directly in the slow cooker or transfer the soup in batches to a regular blender for a silky smooth consistency.
- Stir in the heavy cream, if using, for an extra creamy finish.
- Serve immediately with a sprinkle of fresh herbs or a side of crusty bread.
Notes
For a lighter version: Skip the heavy cream or replace it with half-and-half.
