Ingredients
  

  • 2 28-ounce cans whole peeled tomatoes
  • 1 15-ounce can tomato sauce
  • 1 cup chicken or vegetable broth Choose low-sodium to control the salt level.
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon Italian seasoning
  • 1/2 cup heavy cream optional

Method
 

  1. Place the whole peeled tomatoes, tomato sauce, broth, onion, garlic, salt, and Italian seasoning into your slow cooker.
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours. During this time, your kitchen will smell amazing as all the flavors meld together.
  3. Once cooked, puree the soup. Use an immersion blender directly in the slow cooker or transfer the soup in batches to a regular blender for a silky smooth consistency.
  4. Stir in the heavy cream, if using, for an extra creamy finish.
  5. Serve immediately with a sprinkle of fresh herbs or a side of crusty bread.

Notes

For a lighter version: Skip the heavy cream or replace it with half-and-half.
