Slow Cooker Chicken Satay

Ingredients
  

  • 1 kg Chicken thighs, boneless and skinless
  • 3 tsp Garlic, minced
  • 2 tsp Ginger, minced
  • 150 g Crunchy peanut butter
  • 2 tsp Mild curry powder
  • 3 tbsp Honey
  • 4 tbsp Low sodium soy sauce
  • 2 Red peppers, cut into small chunks
  • 1-2 Limes, juice only

Method
 

  1. Place the chicken, garlic, ginger, peanut butter, curry powder, honey, and soy sauce into your slow cooker. Stir until everything is evenly combined and the chicken is coated in the sauce.
  2. Set your slow cooker to HIGH for 4 hours or LOW for at least 6 hours. Cover with the lid and let it do its magic.
  3. About 30 minutes before the cooking time ends, add the red peppers. Stir them into the sauce and let them cook until crisp-tender.
  4. Just before serving, squeeze the juice of 1 lime over the chicken. Taste, and add more lime juice if needed for extra brightness.
  5. Serve hot with your favorite sides like steamed rice, egg noodles, or even prawn crackers. Enjoy!
