Ingredients
  

  • 650 g Chicken breast (1.5 lb)
  • 1 Red bell pepper, deseeded and sliced into wedges
  • 1 Yellow bell pepper, deseeded and sliced into wedges
  • 1 Green bell pepper, deseeded and sliced into wedges
  • 2 Large onions, peeled and wedged
  • 2 tsp Oil
  • 1 tsp Chili powder
  • 1 tsp Ground cumin
  • 2 tsp Paprika
  • 1/4 tsp Cayenne pepper (optional for spice)
  • 1/2 tsp Garlic powder
  • 1 tsp Sea salt
  • 1 tsp Ground black pepper

Method
 

  1. Place the chicken breasts, peppers, and onions in your slow cooker.
  2. Drizzle with the oil, then sprinkle the chili powder, cumin, paprika, cayenne, garlic powder, salt, and pepper evenly over the top.
  3. Cover and cook on HIGH for 3 hours or on LOW for 5-6 hours.
  4. Check to ensure the chicken is fully cooked (internal temperature should reach 165°F/74°C). Carefully remove the chicken, slice it, and return it to the slow cooker.
  5. Optional: Drain some of the excess liquid if you prefer a less wet mixture.
  6. Serve warm with tortillas, toppings, or over rice or salad for a healthy meal.
