Ingredients
  

  • 3 medium boneless skinless chicken breasts
  • 4 cups low sodium chicken broth
  • 5 small red, gold, or brown potatoes, cut into 1-inch pieces
  • 1 8-ounce can diced green chiles
  • 1 small white or yellow onion, diced
  • 2 cans cream-style corn
  • 2 cups heavy cream (or use half-and-half for a lighter version)
  • 1 teaspoon garlic powder
  • 4-6 strips beef bacon, diced and cooked until crispy
  • Salt and pepper, to taste
  • Freshly chopped parsley, for garnish

Method
 

  1. Combine chicken, chicken broth, potatoes, green chiles, onion, and cream-style corn in your slow cooker. Stir everything together, cover, and cook on low for 4 hours.
  2. Remove the lid and shred the chicken directly in the slow cooker using two forks. It should fall apart easily!
  3. Stir in the heavy cream, garlic powder, and cooked beef bacon. Add salt and pepper to your taste, then cook uncovered for another 15–20 minutes to let the flavors meld.
  4. Ladle into bowls, garnish with parsley, and serve hot with a sprinkle of cracked black pepper.
