Ingredients
  

  • 2 medium sweet potatoes, cubed
  • 2 large carrots, sliced
  • 1/4 cup chopped celery
  • 1 boneless beef chuck roast (2-1/2 pounds)
  • 1 tablespoon canola oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon brown sugar
  • 1 teaspoon ground cumin
  • 3/4 teaspoon salt
  • 3/4 teaspoon ground coriander
  • 3/4 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/8 teaspoon ground cinnamon
  • 3/4 teaspoon grated orange zest
  • 3/4 teaspoon baking cocoa
  • 1 can (15 ounces) tomato sauce

Equipment

  • 5-quart slow cooker

Method
 

  1. Layer the veggies: Place sweet potatoes, carrots, and celery in the bottom of your slow cooker. These form the base for the roast.
  2. Brown the beef: Heat oil in a skillet and sear the beef on all sides. Transfer it to the slow cooker.
  3. Sauté aromatics: In the same skillet, sauté onion until they’re tender. Add garlic and cook for 1 more minute.
  4. Create the sauce: Mix flour, sugars, spices, orange zest, and cocoa in a small bowl. Stir in tomato sauce, then pour the mixture into the skillet, heating through.
  5. Assemble: Pour the sauce over the beef and vegetables in the slow cooker.
  6. Cook: Cover and set your slow cooker to “low.” Cook for 6-8 hours, or until the beef is tender.
