- Layer the veggies: Place sweet potatoes, carrots, and celery in the bottom of your slow cooker. These form the base for the roast.
- Brown the beef: Heat oil in a skillet and sear the beef on all sides. Transfer it to the slow cooker.
- Sauté aromatics: In the same skillet, sauté onion until they’re tender. Add garlic and cook for 1 more minute.
- Create the sauce: Mix flour, sugars, spices, orange zest, and cocoa in a small bowl. Stir in tomato sauce, then pour the mixture into the skillet, heating through.
- Assemble: Pour the sauce over the beef and vegetables in the slow cooker.
- Cook: Cover and set your slow cooker to “low.” Cook for 6-8 hours, or until the beef is tender.
