Slow Cooker Broccoli Cheese Quiche

Ingredients
  

  • 3 cups broccoli, cut into florets
  • 9 large eggs
  • 3/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp onion powder
  • 8 oz cream cheese, softened
  • 2 cups Colby Jack cheese, shredded (divided)

Method
 

  1. Bring a pot of water to a rolling boil, then blanch the broccoli for 3 minutes. Drain and immediately rinse with cold water to stop the cooking process. Pat dry.
  2. In a large mixing bowl, combine eggs, salt, pepper, onion powder, and cream cheese. Beat with a hand mixer on medium speed until smooth (a few small cream cheese lumps are okay).
  3. Spray the inside of your slow cooker with non-stick spray to prevent sticking.
  4. Layer the blanched broccoli evenly over the bottom of the slow cooker. Sprinkle 1/2 cup of shredded cheese over the broccoli.
  5. Pour the egg mixture over the broccoli and cheese. Smooth out the top with a spatula if necessary.
  6. Cover and cook on HIGH for 2 hours and 15 minutes. Resist the temptation to lift the lid—it disrupts the cooking process!
  7. Once the quiche is cooked through, sprinkle the remaining cheese over the top. Cover and let it sit just until the cheese melts (about 10 minutes).
  8. Serve warm and enjoy!
