- Bring a pot of water to a rolling boil, then blanch the broccoli for 3 minutes. Drain and immediately rinse with cold water to stop the cooking process. Pat dry.
- In a large mixing bowl, combine eggs, salt, pepper, onion powder, and cream cheese. Beat with a hand mixer on medium speed until smooth (a few small cream cheese lumps are okay).
- Spray the inside of your slow cooker with non-stick spray to prevent sticking.
- Layer the blanched broccoli evenly over the bottom of the slow cooker. Sprinkle 1/2 cup of shredded cheese over the broccoli.
- Pour the egg mixture over the broccoli and cheese. Smooth out the top with a spatula if necessary.
- Cover and cook on HIGH for 2 hours and 15 minutes. Resist the temptation to lift the lid—it disrupts the cooking process!
- Once the quiche is cooked through, sprinkle the remaining cheese over the top. Cover and let it sit just until the cheese melts (about 10 minutes).
