Slow Cooker Beef and Potato Au Gratin

Ingredients
  

  • 1 lb. ground beef, seasoned with a touch of salt and pepper
  • 3 lbs. russet potatoes, peeled and sliced 1/4 inch thick (about 7 cups)
  • 1 cup thinly sliced white onion
  • 1 tsp. paprika
  • 1/2 tsp. garlic powder
  • 1 tsp. parsley
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 3 cups shredded sharp cheddar cheese
  • 1/2 cup beef broth (or chicken broth)

Method
 

  1. Brown the ground beef in a skillet over medium heat, breaking it into crumbles as it cooks. Drain excess fat and season lightly with salt and pepper.
  2. In a small bowl, mix the paprika, garlic powder, parsley, salt, and pepper.
  3. Layer half of the potato slices in the bottom of your slow cooker.
  4. Sprinkle over half of the sliced onions, half of the seasoning mixture, half of the cooked beef, and half of the cheese.
  5. Repeat the layers with the remaining ingredients, finishing with the cheese as the top layer.
  6. Drizzle the beef broth evenly over the layers.
  7. Cover and cook on the “High” setting for 4 hours. Resist the urge to lift the lid during cooking, as this will slow down the process and result in firmer potatoes.
  8. Once done, check that the potatoes are fork-tender and the cheese is fully melted. Serve immediately and enjoy!

Notes

Using pre-shredded cheese or pre-sliced potatoes can save even more prep time!
