Ingredients

  • 1.3 lb (20 oz) 99% lean ground turkey breast
  • 1 small onion, chopped
  • 1 (28 oz) can diced tomatoes, drained
  • 1 (16 oz) can tomato sauce
  • 1 (4.5 oz) can chopped chilies
  • 1 (15 oz) can chickpeas, drained
  • 1 (15.5 oz) can black beans, drained
  • 1 (15.5 oz) can small red beans, drained
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1/2 cup chopped red onion for topping
  • 1/2 cup chopped fresh cilantro for topping
  • Optional toppings: shredded cheddar, avocado, sour cream, etc.

Method

  1. Brown the turkey: In a medium skillet, cook the ground turkey and chopped onion over medium-high heat until the turkey is browned and cooked through.
  2. Combine ingredients: Transfer the turkey and onion to your slow cooker. Add the beans, chilies, chickpeas, diced tomatoes, tomato sauce, chili powder, and cumin. Stir everything together until evenly combined.
  3. Set it and cook: Choose your cooking setting: on high for 6–8 hours or on low for 10–12 hours. Walk away and let the slow cooker work its magic.
  4. Serve and garnish: Ladle the chili into bowls, and top with red onion, cilantro, and your favorite toppings like shredded cheddar or avocado. Serve warm!
