One Pot Pizza Pasta

Ingredients
  

  • 1 tablespoon olive oil
  • 8 ounces spicy Italian turkey sausage, casing removed
  • 1/2 cup mini pepperoni, divided
  • 1 (15-ounce) can tomato sauce
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon garlic powder
  • 8 ounces rotini pasta
  • Kosher salt and freshly ground black pepper, to taste
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons chopped fresh parsley leaves (optional, for garnish)

Method
 

  1. Preheat your oven to the broil setting.
  2. Heat olive oil in a large oven-proof skillet over medium-high heat.
  3. Add the spicy Italian turkey sausage and cook until browned, crumbling it as it cooks (about 3-5 minutes). Drain any excess fat.
  4. Mix in half of the mini pepperoni and cook for 1 minute to release their flavor.
  5. Pour in the tomato sauce, oregano, basil, garlic powder, and 1 1/2 cups of water. Stir in the rotini pasta. Season with salt and pepper to taste.
  6. Bring the mixture to a boil. Cover, reduce heat to low, and let simmer for 12-14 minutes, stirring occasionally, until the pasta is al dente.
  7. Turn off the heat. Sprinkle mozzarella cheese evenly across the top, then add the other half of the mini pepperoni.
  8. Pop the skillet under the broiler for about 2 minutes, just until the cheese is melted, bubbly, and slightly golden.
  9. Serve immediately with freshly chopped parsley if desired. Enjoy!

Notes

Optional: Use freshly grated mozzarella for smoother melting. Don't overcook the pasta, and consider doubling the recipe for meal prep.
