Ingredients

  • 3 cups corkscrew pasta
  • ¾ cup cream cheese, softened
  • 3 tbsp mayonnaise
  • ¼ cup shredded cheese + ½ cup for topping
  • ½ tsp garlic powder
  • ¼ tsp fine sea salt
  • ¼ tsp pepper
  • 4 cups baby spinach
  • 1 5 oz. can tuna, drained

Equipment

  • Large pot
  • Mixing bowl
  • Baking Dish
  • Oven

Method

  1. Preheat your oven to 375°F and lightly grease an 8×11 casserole dish.
  2. Bring a large pot of salted water to a boil. Cook the pasta until al dente according to package instructions, then drain.
  3. While the pasta is cooking, combine cream cheese, mayonnaise, ¼ cup shredded cheese, garlic powder, salt, and pepper in a large mixing bowl.
  4. Add the hot, drained pasta to the mixing bowl and stir until everything is well-coated.
  5. Mix in the drained tuna and fresh spinach until evenly combined. The warm pasta will wilt the spinach slightly.
  6. Transfer everything to your prepared casserole dish. Sprinkle the remaining ½ cup shredded cheese evenly on top.
  7. Bake for 15 minutes. Switch to the broiler for 2-3 minutes to achieve that gorgeous crispy topping.
  8. Serve warm straight from the oven, and enjoy!
