Healthy Air Fryer Chicken and Veggies

Healthy Air Fryer Chicken and Veggies is a 20-minute miracle meal that delivers crispy, perfectly seasoned chicken and tender veggies with almost zero clean-up. It’s my go-to air fryer recipe for busy weeknights when you need something healthy, fast, and ridiculously good.

Ingredients
  

  • 1 pound chicken breast chopped into bite-size pieces (2-3 medium chicken breasts)
  • 1 cup broccoli florets fresh or frozen
  • 1 zucchini chopped
  • 1 cup bell pepper chopped (any colors you like)
  • 1/2 onion chopped
  • 2 cloves garlic minced or crushed
  • 2 tablespoons olive oil
  • 1/2 teaspoon EACH garlic powder chili powder, salt, pepper
  • 1 tablespoon Italian seasoning or spice blend of choice

Method
 

  1. Preheat your air fryer to 400°F while you prep.
  2. Chop the chicken and veggies into bite-size pieces and toss them into a large mixing bowl.
  3. Add olive oil, garlic powder, chili powder, salt, pepper, and Italian seasoning to the bowl. Toss everything thoroughly to coat each piece evenly.
  4. Transfer the seasoned chicken and veggies into the preheated air fryer basket. Arrange in an even layer (work in batches if needed).
  5. Cook for 10 minutes, shaking the basket halfway through. Keep an eye out for lightly charred veggies and fully cooked chicken (internal temp of 165°F).
