  • 3 (15.5-ounce) cans great Northern beans undrained
  • 2 (15.5-ounce) cans pinto beans undrained
  • 2 (15.25-ounce) cans corn undrained
  • 3 onions diced
  • 2 (14-ounce) cans chicken broth
  • 1 rotisserie chicken boned and cubed
  • 2 (4-ounce) cans diced green chile peppers undrained
  • 1 tablespoon hot pepper sauce
  • 2 teaspoons dried oregano
  • 2 teaspoons ground cumin
  • 1 teaspoon garlic powder
  • Salt and ground black pepper to taste

Method
 

  1. Gather Your Ingredients: Start by prepping all your ingredients: dice the onions, cube the rotisserie chicken, and open all the cans (don’t drain them!).
  2. Load up the Slow Cooker: Combine the beans, corn, onions, chicken broth, cubed rotisserie chicken, green chile peppers, hot pepper sauce, oregano, cumin, garlic powder, salt, and pepper in your slow cooker. Give everything a quick stir to mix.
  3. Set It and Forget It: Cover the slow cooker with the lid. Cook on Low for about 8 hours. The low, slow cooking allows the flavors to meld together beautifully.
  4. Serve and Enjoy: Once the cooking is done, give the chili another stir and taste test for seasoning. Serve hot with your favorite toppings like shredded cheese, sour cream, or sliced jalapeños. Enjoy!
