Heat 1 ½ tablespoons of vegetable oil in a medium saucepan over medium-high heat.
Add the rice, frozen mixed vegetables, chicken stock, and salt. Stir everything to combine.
Bring the mixture to a boil, letting it cook for 1 minute.
Reduce the heat to low, cover the saucepan with a lid, and let it simmer for 10 minutes. Walk away and let the magic happen!
Once the liquid is absorbed, remove the lid, add in the shredded Cheddar cheese, and stir until it’s fully melted.
