  • 1 cup butter, softened
  • 3/4 cup sugar
  • 3/4 cup packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3 cups quick-cooking oats
  • 1-1/2 cups all-purpose flour
  • 1 package (3.4 ounces) instant vanilla pudding mix
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips
  • 1 cup chopped nuts

Method
 

  1. Preheat your air fryer to 325°F for even baking.
  2. In a large bowl, cream together the butter, sugar, and brown sugar until the mixture is light and fluffy (about 5-7 minutes).
  3. Beat in eggs and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the oats, flour, dry pudding mix, baking soda, and salt. Gradually fold this mixture into the wet ingredients until a dough forms.
  5. Stir in the chocolate chips and nuts, ensuring they’re evenly distributed.
  6. Drop dough by tablespoonfuls onto a greased air fryer tray, spacing them about 1 inch apart. Flatten them slightly with the back of a spoon.
  7. In batches, air fry for 8-10 minutes or until cookies are lightly browned. Keep an eye on the first batch to fine-tune the timing.
