Method
- Preheat your air fryer to 325°F for even baking.
- In a large bowl, cream together the butter, sugar, and brown sugar until the mixture is light and fluffy (about 5-7 minutes).
- Beat in eggs and vanilla extract until fully combined.
- In a separate bowl, whisk together the oats, flour, dry pudding mix, baking soda, and salt. Gradually fold this mixture into the wet ingredients until a dough forms.
- Stir in the chocolate chips and nuts, ensuring they’re evenly distributed.
- Drop dough by tablespoonfuls onto a greased air fryer tray, spacing them about 1 inch apart. Flatten them slightly with the back of a spoon.
- In batches, air fry for 8-10 minutes or until cookies are lightly browned. Keep an eye on the first batch to fine-tune the timing.
- Carefully transfer the cookies to a wire rack to cool completely. Enjoy!
