Preheat your air fryer to 320°F. While it heats, spray an air fryer-safe baking pan with nonstick cooking spray and set it aside.
In a large mixing bowl, combine the Jiffy mix, egg, and milk. Stir until just combined—don’t overmix, or your cornbread could turn dense.
Pour the batter into the prepared baking pan. Place the pan in the air fryer basket and cook for 12 minutes.
Carefully open the air fryer and cover the pan with aluminum foil. This prevents the top from over-browning.
Air fry for an additional 4-5 minutes, until a toothpick inserted into the center comes out clean.
Let the cornbread rest in the pan for a few minutes before transferring it to a wire rack or serving plate. Serve warm and enjoy!
