Method
- Preheat your oven to 350°F. Grease a 3-quart baking dish with nonstick spray.
- In a large skillet over medium heat, cook the ground beef until browned, breaking it apart as you go. Drain any excess grease.
- Add the chopped onion and red bell pepper to the skillet. Cook until softened, about 5 minutes.
- Stir in the taco seasoning and water. Let it simmer until thickened, about 5 minutes.
- Mix in the diced tomatoes, black beans, and sour cream. Stir until combined and remove from heat.
- Spread 1 1/2 cups of crushed Doritos into the bottom of your prepared baking dish.
- Spoon half of the meat mixture over the chips. Top with another layer of Doritos (1 1/2 cups) and 1 1/2 cups shredded cheese.
- Repeat the layers with the remaining meat, chips, and cheese.
- Bake uncovered for 25 minutes, or until the cheese is melted and bubbly.
- Serve warm with chopped tomato, salsa, cilantro, and a dollop of sour cream on top. Enjoy!
