- Season both sides of the chicken with Italian seasoning, onion powder, and a pinch of salt and pepper.
- Spray the inside of your crockpot with nonstick cooking spray, then layer the chicken in the bottom.
- In a bowl, whisk together the chicken broth, heavy cream, minced garlic, sun-dried tomatoes, and Parmesan cheese.
- Pour the sauce over the chicken, ensuring it covers evenly.
- Cook on high for 3 hours or on low for 5 hours.
- Five minutes before serving, stir in the chopped spinach and let it wilt in the residual heat.
- Taste and adjust seasoning if needed. Serve over pasta or rice for a complete meal.
Notes
For a dairy-free option, swap heavy cream with full-fat coconut milk. You can also add in more veggies for extra nutrition!
