Ingredients
  

  • 4 boneless skinless chicken breasts
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon onion powder
  • Kosher salt and cracked black pepper, to taste
  • 2 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup baby spinach, chopped

Equipment

Method
 

  1. Season both sides of the chicken with Italian seasoning, onion powder, and a pinch of salt and pepper.
  2. Spray the inside of your crockpot with nonstick cooking spray, then layer the chicken in the bottom.
  3. In a bowl, whisk together the chicken broth, heavy cream, minced garlic, sun-dried tomatoes, and Parmesan cheese.
  4. Pour the sauce over the chicken, ensuring it covers evenly.
  5. Cook on high for 3 hours or on low for 5 hours.
  6. Five minutes before serving, stir in the chopped spinach and let it wilt in the residual heat.
  7. Taste and adjust seasoning if needed. Serve over pasta or rice for a complete meal.

Notes

For a dairy-free option, swap heavy cream with full-fat coconut milk. You can also add in more veggies for extra nutrition!
