Method
- Rinse and sort the beans from the soup mix, discarding any debris or broken beans.
- Add the beans to a 6-quart slow cooker.
- Set aside the Cajun seasoning packet for later.
- Pour the chicken broth over the beans.
- Add the cubed smoked turkey, diced vegetables (leeks, bell pepper, carrots, celery), and soy sauce to the slow cooker.
- Cover and cook on HIGH for 5-6 hours, or until the beans are tender.
- After cooking, stir in the reserved Cajun seasoning packet.
- Season with salt to taste. Serve hot with your favorite toppings or sides.
