Ingredients
  

  • 20 oz. bag Hurst's Hambeens Cajun 15 Bean Soup Mix (set aside the seasoning packet)
  • 1.5 lbs. smoked turkey, cubed into 1-inch pieces
  • 1 large leek, trimmed and sliced
  • 1 red bell pepper, diced
  • 2 carrots peeled and diced
  • 2 celery ribs diced
  • 2 Tbsp. soy sauce
  • 8 cups chicken broth

Method
 

  1. Rinse and sort the beans from the soup mix, discarding any debris or broken beans.
  2. Add the beans to a 6-quart slow cooker.
  3. Set aside the Cajun seasoning packet for later.
  4. Pour the chicken broth over the beans.
  5. Add the cubed smoked turkey, diced vegetables (leeks, bell pepper, carrots, celery), and soy sauce to the slow cooker.
  6. Cover and cook on HIGH for 5-6 hours, or until the beans are tender.
  7. After cooking, stir in the reserved Cajun seasoning packet.
  8. Season with salt to taste. Serve hot with your favorite toppings or sides.
