Ingredients
  

  • 2 pounds turkey sausage links
  • 29 ounces low sodium beef broth
  • 29 ounces canned diced tomatoes with green chilies (such as RoTel brand)
  • 19 ounces canned red kidney beans (drained and rinsed)
  • 15 ounces canned garbanzo beans (drained and rinsed)
  • 2 medium zucchini (halved and sliced)
  • 1 medium yellow onion (diced)
  • 2 cloves garlic (minced)
  • 1 tablespoon dried Italian seasoning
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pound small shell pasta

Method
 

  1. Grab your 6-quart (or larger) slow cooker. Add the turkey sausage, beef broth, diced tomatoes with green chilies, kidney beans, garbanzo beans, zucchini, onion, garlic, Italian seasoning, salt, and pepper.
  2. Cover and cook on LOW for 4-6 hours, until the zucchini is tender and the flavors meld beautifully.
  3. About 30 minutes before the stew is done, bring a pot of salted water to a boil and cook the small shell pasta according to package instructions. Drain and set aside.
  4. Stir the cooked pasta into the slow cooker just before serving.
  5. Ladle the stew into bowls, top with freshly grated Parmesan (optional), and serve with crusty bread for dipping into the savory broth.
