Method
- Line a large (6-quart or larger) slow cooker with strips of aluminum foil.
- Spray the foil with olive oil or non-stick cooking spray.
- In a large mixing bowl, combine all ingredients except the cooking spray and topping ingredients.
- Transfer the mixture into the prepared slow cooker and shape it into an oblong loaf on top of the foil strips. The mixture will be loose, so handle gently.
- Place the lid on the slow cooker and cook on high for 3 hours (or low for 6 hours).
- Fifteen minutes before the cook time ends, turn off the slow cooker and spread the ketchup over the top of the meatloaf, followed by the mozzarella cheese.
- Replace the lid and allow the cheese to melt for 5–10 minutes.
- Carefully lift the meatloaf out of the slow cooker using the foil strips, transfer to a serving platter, and garnish with fresh parsley. Serve and enjoy!
Notes
Feel free to substitute ground turkey or chicken if you're looking to make it even leaner. Pre-minced garlic is also a fantastic time-saver!
