Ingredients
  

  • 2 lbs. 7% fat ground beef
  • 3 large eggs
  • 1 small white onion diced
  • 1 green bell pepper diced
  • 1/3 cup ketchup
  • 1/4 cup milk
  • 1/2 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp pepper
  • 25 saltine crackers crushed
  • 5 small Russet potatoes

Method
 

  1. In a large mixing bowl, combine the ground beef, eggs, diced onion, diced bell pepper, ketchup, milk, garlic powder, salt, pepper, and crushed saltines. Mix everything together with a spoon or, better yet, clean hands until well blended.
  2. Form the mixture into a loaf shape and gently place it in your slow cooker.
  3. Wash and dry your potatoes, then wrap each one in aluminum foil to seal in the steam.
  4. Arrange the foiled potatoes around the edges of the meatloaf, resting on top slightly if needed.
  5. Cover the slow cooker with the lid. Cook on low for 8 hours without lifting the lid—it’s important not to release the heat!
  6. When done, carefully lift out the meatloaf and slice it. Serve alongside the baked potatoes with your favorite toppings like sour cream, butter, or shredded cheese.
