Ingredients
  

  • 3 15-ounce cans fire-roasted corn, drained well
  • 2 jalapeños seeded and diced
  • ½ cup sour cream
  • 1 cup shredded Mexican cheese blend
  • Salt and pepper, to taste
  • 8-ounce block cream cheese, cubed
  • ½ pound beef bacon, cooked and crumbled
  • Sliced green onions, to garnish

Method
 

  1. Place the drained fire-roasted corn, diced jalapeños, sour cream, and shredded Mexican cheese blend into your slow cooker. Sprinkle with salt and pepper to taste.
  2. Stir everything together until evenly combined.
  3. Add the cream cheese cubes on top of the mixture—no need to stir yet.
  4. Cover and cook on low heat for 2 hours. During this time, go about your day stress-free!
  5. Uncover the slow cooker and stir thoroughly until the cream cheese is fully incorporated and the dip is smooth and creamy.
  6. Top with crispy crumbled beef bacon and a sprinkling of sliced green onions for extra flavor and color.
  7. Serve immediately with tortilla chips, corn chips, or crackers. Enjoy!
