Ingredients

  • 1 1/2 pounds ground beef
  • 1 yellow onion chopped
  • 2 teaspoons chili powder
  • 2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1 tablespoon salted butter
  • 1 tablespoon ketchup
  • Sea salt and black pepper
  • 2 cups broth
  • 1 pound short cut pasta
  • 1 zucchini grated (about 1 cup grated)
  • 2 cups whole milk
  • 1 1/2-2 cups shredded cheddar cheese
  • Fresh parsley for serving

Equipment

  • Slow Cooker
  • grater
  • Wooden spoon

Method

  1. Set your crockpot to high. Add the raw ground beef, onion, chili powder, garlic powder, paprika, butter, and ketchup. Season generously with salt and pepper, then pour the broth over everything. Stir to break up the meat a bit. Cover and cook on low for 3-4 hours or high for 1-2 hours until the beef is fully cooked.
  2. About 15 minutes before the cook time is up, turn the crockpot to high. Stir in the uncooked pasta, grated zucchini, and milk. Cover and cook for 15-20 minutes, stirring occasionally so the noodles don’t stick.
  3. Add the shredded cheddar cheese, stirring until it melts and coats the pasta evenly.
  4. Scoop into bowls, sprinkle with fresh parsley, and enjoy your easy comfort meal!

Notes

Tip: To get the best results, make sure to stir well during the last step when adding pasta to prevent sticking.
