Ingredients
  

  • 1 pound ground turkey sausage (mild or hot)
  • Salt and pepper, to taste
  • 32 ounce container chicken broth
  • 2 (14.5-ounce) cans Italian-style diced tomatoes, drained
  • 8 ounce block cream cheese, cut into chunks
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic salt
  • 19 ounce bag frozen cheese tortellini
  • 2 cups fresh baby spinach
  • Shredded Parmesan cheese, for topping (optional)

Method
 

  1. Brown and crumble the ground turkey sausage in a skillet over medium heat. Season with salt and pepper, then drain any excess grease.
  2. Transfer the cooked sausage to the bottom of a 4-quart crockpot.
  3. Pour in the chicken broth and drained diced tomatoes.
  4. Top with chunks of cream cheese, then sprinkle Italian seasoning and garlic salt over the mixture.
  5. Add the frozen cheese tortellini and fresh baby spinach on top.
  6. Cover and cook on low for 3-4 hours.
  7. After cooking, uncover and stir well to ensure the cream cheese is fully melted. If needed, cover again and cook for an additional 20 minutes.
  8. Serve warm, topped with shredded Parmesan cheese if desired.
