- Brown and crumble the ground turkey sausage in a skillet over medium heat. Season with salt and pepper, then drain any excess grease.
- Transfer the cooked sausage to the bottom of a 4-quart crockpot.
- Pour in the chicken broth and drained diced tomatoes.
- Top with chunks of cream cheese, then sprinkle Italian seasoning and garlic salt over the mixture.
- Add the frozen cheese tortellini and fresh baby spinach on top.
- Cover and cook on low for 3-4 hours.
- After cooking, uncover and stir well to ensure the cream cheese is fully melted. If needed, cover again and cook for an additional 20 minutes.
- Serve warm, topped with shredded Parmesan cheese if desired.
