Ingredients
  

  • 2 lbs. boneless skinless chicken thighs (trim off excess fat if desired)
  • 1 oz. packet ranch seasoning mix
  • 16 oz. cream cheese
  • 8 slices beef bacon (sliced, cooked, and drained)
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup sliced green onions

Method
 

  1. Place the chicken thighs in the slow cooker.
  2. Sprinkle the ranch seasoning mix evenly over the chicken.
  3. Add the cream cheese on top of the chicken.
  4. Cover and cook on LOW for 7 hours. For best results, avoid opening the lid during this time.
  5. Using two forks, shred the chicken right in the slow cooker.
  6. Stir the cream cheese into the shredded chicken until fully combined, then add the cooked bacon and mix well.
  7. Spread the mixture into an even layer. Sprinkle cheddar cheese over the top.
  8. Cover and cook for an additional 10 minutes, just until the cheese melts.
  9. Top with sliced green onions and serve over rice, if desired.
