Crockpot Cowboy Casserole

This Crockpot Cowboy Casserole is a time-saving, easy cheesy weeknight dinner that is sure to please. With tender potatoes, savory ground beef, and melty cheddar cheese, it's the best homemade crockpot casserole for busy nights!

Ingredients
  

  • 1/4 cup diced onion
  • 1/2 tsp pepper
  • 1 tsp salt
  • 1/2 tsp Mrs. Dash
  • 1 lbs small red potatoes, sliced thin (about 4-5 small red potatoes)
  • 1 can cream of mushroom soup
  • 1 lb ground beef, browned and drained
  • 1 can diced tomatoes with liquid
  • 1 cup canned corn, drained
  • 1 can dark red kidney beans, drained
  • 1 cup shredded cheddar cheese

Method
 

  1. Prepare your crockpot by spraying it with non-stick cooking spray.
  2. Add all ingredients except for the shredded cheddar cheese into the crockpot. Stir everything together until well mixed.
  3. Cover your crockpot, and cook on high for 4 hours or low for 7-8 hours. During this time, the potatoes will become tender, and all the flavors will meld beautifully.
  4. When the cooking time is up, uncover your crockpot and sprinkle shredded cheddar cheese over the top.
  5. Recover and let it cook for an additional 30 minutes until the cheese is melty and delicious.

Notes

Pro tip: Spray your crockpot with non-stick cooking spray before adding ingredients for easier cleanup!
