Crockpot Chicken and Broccoli

Ingredients
  

  • 1 cup chicken broth
  • ½ cup soy sauce or gluten-free alternative
  • 1 tablespoon hoisin sauce
  • ¼ cup dark brown sugar, packed
  • 1 tablespoon sesame seed oil
  • 4 cloves garlic, minced or pressed
  • 1 ½ pounds raw boneless, skinless chicken breasts
  • 2 tablespoons cornstarch
  • ¼ cup water
  • 1 head broccoli, cut into florets
  • 1 cup long-grain rice
  • 2 cups water
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter

Method
 

  1. In a mixing bowl, whisk together chicken broth, soy sauce, hoisin sauce, brown sugar, sesame oil, and minced garlic until well combined.
  2. Grease your slow cooker lightly, then pour half of the sauce mixture into the bottom.
  3. Add the chicken breasts to the crockpot and pour the remaining sauce over the top.
  4. Cover and cook on low heat for 4 hours.
  5. After 4 hours, whisk together cornstarch and water, then stir this mixture into the crockpot to thicken the sauce.
  6. Add the broccoli florets and stir gently to combine.
  7. Switch the slow cooker to high and cook for 1 more hour, covered.
  8. Remove the chicken from the slow cooker, cut it into large chunks, and return it to the pot.
  9. Serve immediately over cooked rice!
