Method
- Place onions, carrots, celery, green beans, cabbage, and garlic at the bottom of a 6-quart slow cooker.
- Top with cooked beef and drained, rinsed beans.
- Sprinkle in brown sugar, salt, pepper, chili powder, bay leaf, and optional curry powder.
- Pour in the crushed tomatoes, beef broth, and water.
- Cover and cook on LOW for 6-8 hours, or on HIGH for 3-4 hours, until vegetables are tender.
- Remove and discard the bay leaf.
- Taste and adjust seasoning with additional salt and pepper, if needed.
- Ladle into bowls, garnish with fresh herbs, and serve hot.
Notes
Quick tip: If your slow cooker has a sauté function, you can cook the beef right in it to save on cleanup!
