Method
- Place 2-3 pounds of chicken drumsticks into your slow cooker.
- In a bowl, mix 1 cup of mayonnaise, 1 cup of sweet chili sauce, 2 teaspoons of sriracha, 1 teaspoon of salt, and 1/2 teaspoon of black pepper until smooth.
- Reserve half the sauce in a separate bowl and refrigerate for serving later.
- Pour the remaining sauce over the chicken in the slow cooker. Ensure the drumsticks are evenly coated.
- Cover and cook on HIGH for 3.5-4 hours or LOW for 5 hours.
- Preheat your oven to broil.
- Transfer the cooked drumsticks to a wire rack placed on a sheet pan (or directly onto the sheet pan).
- Broil for about 5 minutes, until the chicken develops a golden-brown, caramelized finish. Watch closely to prevent burning.
- Garnish with green onions and serve with the reserved cold bang bang sauce on the side.
Notes
Optional: Serve over white or jasmine rice to soak up the flavorful sauce!
