Crockpot Bang Bang Chicken

Ingredients
  

  • 2-3 pounds chicken drumsticks Bone-in chicken thighs are another great option.
  • 1 cup sweet chili sauce I recommend Frank’s Red Hot brand for the perfect sweet and tangy kick, but any sweet chili sauce will work.
  • 1 cup mayonnaise The creamy base for that signature bang bang sauce. Feel free to swap with light mayo to reduce calories.
  • 2 teaspoons sriracha Brings the heat! Add more or less depending on your spice preference.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 3-4 green onions green onions The garnish that ties everything together. Slice thinly for a fresh pop of flavor and color!

Method
 

  1. Place 2-3 pounds of chicken drumsticks into your slow cooker.
  2. In a bowl, mix 1 cup of mayonnaise, 1 cup of sweet chili sauce, 2 teaspoons of sriracha, 1 teaspoon of salt, and 1/2 teaspoon of black pepper until smooth.
  3. Reserve half the sauce in a separate bowl and refrigerate for serving later.
  4. Pour the remaining sauce over the chicken in the slow cooker. Ensure the drumsticks are evenly coated.
  5. Cover and cook on HIGH for 3.5-4 hours or LOW for 5 hours.
  6. Preheat your oven to broil.
  7. Transfer the cooked drumsticks to a wire rack placed on a sheet pan (or directly onto the sheet pan).
  8. Broil for about 5 minutes, until the chicken develops a golden-brown, caramelized finish. Watch closely to prevent burning.
  9. Garnish with green onions and serve with the reserved cold bang bang sauce on the side.

Notes

Optional: Serve over white or jasmine rice to soak up the flavorful sauce!
