Method
- Drizzle olive oil into the bottom of your slow cooker to prevent sticking.
- Place chicken breasts over the oil in a single layer.
- Season the chicken generously with salt and pepper.
- Layer thinly sliced onions and garlic cloves over the chicken.
- Sprinkle oregano, basil, rosemary, and thyme evenly over the top.
- Pour balsamic vinegar over the seasoned chicken, then top with crushed tomatoes.
- Set the slow cooker to High and cook for about 4 hours, or until the chicken is no longer pink in the center and easily shreds with a fork.
Notes
Shortcut: Pre-minced garlic or frozen diced onions work perfectly if you want to save even more time.
