Ingredients
  

  • 2 tablespoons olive oil
  • 4 skinless, boneless chicken breast halves or more to taste
  • Salt and ground black pepper to taste
  • 1 onion, thinly sliced
  • 4 cloves garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon dried thyme
  • 1/2 cup balsamic vinegar
  • 2 (14.5 ounce) cans crushed tomatoes

Method
 

  1. Drizzle olive oil into the bottom of your slow cooker to prevent sticking.
  2. Place chicken breasts over the oil in a single layer.
  3. Season the chicken generously with salt and pepper.
  4. Layer thinly sliced onions and garlic cloves over the chicken.
  5. Sprinkle oregano, basil, rosemary, and thyme evenly over the top.
  6. Pour balsamic vinegar over the seasoned chicken, then top with crushed tomatoes.
  7. Set the slow cooker to High and cook for about 4 hours, or until the chicken is no longer pink in the center and easily shreds with a fork.

Notes

Shortcut: Pre-minced garlic or frozen diced onions work perfectly if you want to save even more time.
