Ingredients
  

  • 3 medium artichokes (or 2 large artichokes) Look for ones with tightly closed leaves and a vibrant green color for the freshest flavor.
  • 1/4 tsp salt to taste
  • 1/4 tsp pepper to taste
  • 2 garlic cloves minced brings bold, aromatic flavor.
  • 1/2 lemon juiced The juice not only enhances the flavor but also prevents the artichokes from browning during cooking.
  • 1/4 cup butter Adds richness and helps the garlic flavor soak into every leaf.
  • 1 cup water

Method
 

  1. Trim the artichokes by cutting off the bottoms so they sit flat. Then cut about 1/2 inch off the tops to expose the inside leaves.
  2. Place the artichokes in your slow cooker. If they don’t fit smoothly, peel off a few leaves to make room.
  3. Sprinkle salt, pepper, and minced garlic over the artichokes. Squeeze lemon juice on top to brighten the flavors and prevent browning.
  4. Slice the butter and place it on top of the artichokes, letting it melt down into the leaves during cooking.
  5. Pour one cup of water into the bottom of the crockpot to create a gentle steam bath.
  6. Cover and cook on HIGH for 3.5–4 hours or LOW for 8–9 hours. Resist the temptation to open the lid—it’s crucial to keep the steam inside!
  7. Enjoy the finished artichokes with melted butter for dipping—or mayonnaise if that’s how you roll.
