Ingredients
  

  • 1 pound ground beef Adds hearty flavor and satisfying texture. Swap with ground turkey or sausage for a twist.
  • 32 oz Velveeta Cheese, diced Melts like a dream. Dice it into smaller cubes for faster melting.
  • 2 cans (10 oz each) diced tomatoes with green chiles The classic Rotel brand is a must, but store-brand options work just as well.

Method
 

  1. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  2. Add the diced Velveeta cheese to your slow cooker, followed by the browned ground beef and both cans of diced tomatoes with green chiles (juices included).
  3. Set your slow cooker to low and cook for 2 hours (or high for 1 hour), stirring occasionally to ensure even melting.
  4. Once melted and creamy, switch the slow cooker to warm and serve with tortilla chips or veggies for dipping.
