Method
- In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Add the diced Velveeta cheese to your slow cooker, followed by the browned ground beef and both cans of diced tomatoes with green chiles (juices included).
- Set your slow cooker to low and cook for 2 hours (or high for 1 hour), stirring occasionally to ensure even melting.
- Once melted and creamy, switch the slow cooker to warm and serve with tortilla chips or veggies for dipping.
