Ingredients

  • 1 lb mushrooms (white or cremini, whole or sliced)
  • 1/4 cup olive oil
  • 2 tablespoons chopped green onions
  • Salt and pepper to taste
  • 3/4 cup chicken broth

Method

  1. Prep: Clean your mushrooms with a damp paper towel to remove any dirt. Avoid rinsing them directly with water—they'll absorb too much moisture.
  2. Layer: Add the mushrooms to your slow cooker and drizzle olive oil evenly over the top.
  3. Mix: In a small bowl, combine the chicken broth, green onions, salt, and pepper. Stir until well combined.
  4. Cook: Pour the broth mixture over the mushrooms. Cover and cook on low for 4 hours or high for 2 hours, until the mushrooms are tender and flavorful.
  5. Serve: Stir gently, then plate your mushrooms with a sprinkle of extra green onions for garnish. Enjoy!

Notes

Notes: Swap chicken broth for vegetable broth for a vegetarian-friendly version. Pre-cleaned mushrooms save even more time!
