Method
- Prep your chicken: Pat the chicken tenders dry with paper towels and season with kosher salt and black pepper.
- Set up your breading station: In one shallow bowl, beat two large eggs. In another shallow bowl, mix 1/2 cup seasoned breadcrumbs with 1/2 cup seasoned panko.
- Coat the chicken: Dip each tender into the egg, allowing any excess to drip off. Then coat it in the breadcrumb mixture, pressing gently to adhere. Shake off the excess and repeat for all tenders.
- Oil and preheat: Lightly spray both sides of the breaded tenders with olive oil spray. Preheat your air fryer to 400°F for 3 minutes.
- Cook the chicken: Arrange the tenders in a single layer in your air fryer basket. Cook in batches at 400°F for 5–6 minutes on each side, flipping halfway through, until crispy and golden.
- Serve and enjoy: Transfer the hot tenders to a plate and serve with lemon wedges for a refreshing twist.
