Crispy Air Fryer Chicken Taquitos

These Crispy Air Fryer Taquitos are a quick and delicious snack that are ready in just 30 minutes, making them perfect for busy weeknights. Enjoy a healthier version of taquitos with a delightful crunch and melty filling!

Ingredients
  

  • 2 cups cooked shredded chicken Rotisserie chicken is my favorite shortcut—no cooking required!
  • 1 tablespoon taco seasoning
  • 4 ounces cream cheese Adds creaminess and holds the filling together perfectly.
  • 1 tablespoon diced jalapeños For a little kick, but feel free to skip or swap with mild green chilies.
  • 1 green onion sliced, greens and whites divided
  • 1 cup shredded Mexican cheese blend Pre-shredded cheese melts beautifully and is convenient to grab at the store.
  • 8 corn tortillas 6 inches each
  • Cooking spray I recommend using an oil sprayer or light brush of olive oil for best results.

Method
 

  1. In a skillet, combine shredded chicken, taco seasoning, and 3 tablespoons of water. Simmer over medium heat for 5 minutes, or until the water has evaporated.
  2. Reduce heat to low and add the cream cheese, jalapeños, and the whites of the green onion. Stir until melted and creamy.
  3. Stack the tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave for 40 seconds until pliable.
  4. Spoon about 2 tablespoons of the filling onto each tortilla and sprinkle with 2 tablespoons of shredded cheese. Roll tightly and secure with a toothpick.
  5. Preheat your air fryer to 400°F for 3-5 minutes.
  6. Spray the taquitos lightly with cooking spray. Place them in a single layer in the air fryer basket.
  7. Cook for 6-8 minutes, flipping halfway through, until golden and crispy.
  8. Let the taquitos cool for 2 minutes before serving. Remove toothpicks and garnish with green onion tops or your favorite toppings.
