- In a skillet, combine shredded chicken, taco seasoning, and 3 tablespoons of water. Simmer over medium heat for 5 minutes, or until the water has evaporated.
- Reduce heat to low and add the cream cheese, jalapeños, and the whites of the green onion. Stir until melted and creamy.
- Stack the tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave for 40 seconds until pliable.
- Spoon about 2 tablespoons of the filling onto each tortilla and sprinkle with 2 tablespoons of shredded cheese. Roll tightly and secure with a toothpick.
- Preheat your air fryer to 400°F for 3-5 minutes.
- Spray the taquitos lightly with cooking spray. Place them in a single layer in the air fryer basket.
- Cook for 6-8 minutes, flipping halfway through, until golden and crispy.
- Let the taquitos cool for 2 minutes before serving. Remove toothpicks and garnish with green onion tops or your favorite toppings.
