Ingredients

  • 4 4-ounce skinless, boneless chicken breast halves
  • 2 tablespoons butter, melted
  • 1 4-ounce package cream cheese, cubed
  • 1 10.75-ounce can condensed cream of chicken soup
  • 1 ½ .7-ounce packages dry Italian-style salad dressing mix
  • ½ cup dry sherry

Method

  1. Prep the chicken: Rinse the chicken breasts and pat them dry with paper towels.
  2. Butter up: Place the chicken in your slow cooker and drizzle with melted butter, making sure it coats all sides.
  3. Cook: Cover and cook on High for 4-5 hours, or until the chicken is tender.
  4. Shred the chicken: Using a metal spatula, chop the chicken into bite-size pieces right in the slow cooker.
  5. Make the sauce: In a medium saucepan over medium heat, combine cream cheese, cream of chicken soup, dry Italian dressing mix, and dry sherry. Stir constantly until the cream cheese is melted and the mixture is smooth and bubbling.
  6. Combine and finish: Pour the sauce over the chicken in the slow cooker. Cover and cook on High for 30 minutes to let the flavors meld.

Notes

Optional: Sprinkle with freshly grated Parmesan before serving for an extra cheesy touch.
