Ingredients

  • ½ cup unsalted butter, melted
  • 1 16-ounce container cottage cheese
  • 2 cups mozzarella cheese approximately 8 ounces/226g
  • ¼ cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • 10 large eggs, lightly beaten

Equipment

  • 9x13-inch baking dish
  • Whisk
  • Mixing bowl

Method

  1. Preheat your oven to 400°F. Spray a 9×13-inch baking dish with nonstick cooking spray so the casserole doesn’t stick.
  2. In a large mixing bowl, lightly whisk the eggs until combined. This will make your casserole light and fluffy.
  3. Stir in the melted butter, cottage cheese, mozzarella cheese, flour, baking powder, Italian seasoning, and salt. The mixture will look a little lumpy, but that’s totally normal!
  4. Pour the mixture into the prepared baking dish. Pop it into the oven and bake for 30-40 minutes, or until the top is golden brown and the center is completely set. You’ll know it’s done when a toothpick inserted in the center comes out clean.
  5. Let the casserole cool for 5-10 minutes before slicing into squares. Serve warm and enjoy!
  6. Bonus: If you’re into meal prepping, you can slice the casserole into portions, store them in individual containers, and freeze them. A quick microwave reheat, and breakfast is served!

Notes

To make ahead, assemble the casserole the night before and let it come to room temperature (30 minutes) before baking. Feel free to customize by adding sautéed veggies like bell peppers or spinach, or mix in crumbled sausage or bacon for a smoky touch. Leftovers store well in the fridge for 3 days or freeze for up to 3 months. Ricotta can be used as a cottage cheese substitute if preferred.
