Boil the pasta in a large pot of salted water until al dente. This usually takes about 7-8 minutes. Drain well and set aside.
In a large skillet, heat the olive oil over medium-low. Add the onions and cook until soft, about 5 minutes. Toss in the garlic and sauté for another 30 seconds.
Increase the heat to medium and add the ground beef. Cook until browned, breaking it up with a wooden spoon. Season with salt and pepper.
Stir in the tomato paste, then add the diced tomatoes and mustard. Let it simmer gently for 2 minutes, stirring occasionally, until slightly thickened.
Combine the cooked pasta with the ground beef mixture and transfer everything into your prepared baking dish.
Sprinkle the cheddar cheese evenly over the top, then bake for 15 minutes, until the cheese is fully melted.
Garnish with chopped dill pickles and serve hot.
