Ingredients
  

  • 5 large sweet onions, halved and sliced
  • 1/2 cup butter
  • 1/2 cup crushed butter-flavored crackers (about 12 crackers)
  • 1/2 cup grated Parmesan cheese

Method
 

  1. Preheat your oven to 350°F and grease a 2-quart baking dish.
  2. In a large skillet, melt the butter over medium heat. Add the onions and sauté until they’re tender and just starting to caramelize—about 10 minutes.
  3. Layer half of the sautéed onions evenly in the prepared baking dish. Sprinkle with half of the crushed crackers and half of the Parmesan cheese.
  4. Repeat the layers with the remaining onions, crackers, and cheese.
  5. Slide the dish into your preheated oven and bake, uncovered, for 25-30 minutes. You’re looking for a golden-brown, bubbly top.

Notes

Optional: Save time slicing by using a mandoline or food processor. You can assemble the casserole up to a day in advance and store it covered in the fridge.
