- Preheat your oven to 350°F and grease a 2-quart baking dish.
- In a large skillet, melt the butter over medium heat. Add the onions and sauté until they’re tender and just starting to caramelize—about 10 minutes.
- Layer half of the sautéed onions evenly in the prepared baking dish. Sprinkle with half of the crushed crackers and half of the Parmesan cheese.
- Repeat the layers with the remaining onions, crackers, and cheese.
- Slide the dish into your preheated oven and bake, uncovered, for 25-30 minutes. You’re looking for a golden-brown, bubbly top.
Notes
Optional: Save time slicing by using a mandoline or food processor. You can assemble the casserole up to a day in advance and store it covered in the fridge.
