- Preheat the oven to 350°F (175°C). Grease a deep-sided 8x8-inch baking dish or, for a thinner casserole, use a 9x13-inch pan instead. Spread the thawed hash browns in an even layer.
- In a large skillet over medium heat, cook the sausage and diced onions until the sausage is browned and crumbled, about 10 minutes. Drain any excess grease and set aside.
- In a large bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper until smooth and well combined.
- Pour the egg mixture evenly over the hash browns in the baking dish. Sprinkle 6 ounces of Cheddar cheese over the top.
- Add the sausage and onion mixture in an even layer, then sprinkle with the remaining 6 ounces of cheese. Cover with aluminum foil.
- Bake in the preheated oven for 1 hour. Remove the foil and continue baking for about 10 more minutes, or until a knife inserted in the center comes out clean.
