  • 1 (2-pound) package frozen hash brown potatoes thawed
  • 1 pound pork sausage
  • 1 small onion diced
  • 5 large eggs
  • ½ cup milk
  • ½ teaspoon onion powder
  • teaspoon garlic powder

  • 12 ounces shredded Cheddar cheese

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a deep-sided 8x8-inch baking dish or, for a thinner casserole, use a 9x13-inch pan instead. Spread the thawed hash browns in an even layer.
  2. In a large skillet over medium heat, cook the sausage and diced onions until the sausage is browned and crumbled, about 10 minutes. Drain any excess grease and set aside.
  3. In a large bowl, whisk together the eggs, milk, onion powder, garlic powder, salt, and pepper until smooth and well combined.
  4. Pour the egg mixture evenly over the hash browns in the baking dish. Sprinkle 6 ounces of Cheddar cheese over the top.
  5. Add the sausage and onion mixture in an even layer, then sprinkle with the remaining 6 ounces of cheese. Cover with aluminum foil.
  6. Bake in the preheated oven for 1 hour. Remove the foil and continue baking for about 10 more minutes, or until a knife inserted in the center comes out clean.
