- Preheat your oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish to prevent sticking.
- Heat a large skillet over medium-high heat. Cook the diced beef bacon and chopped onion until the bacon is browned and the onions are soft, about 10 minutes. Drain off excess fat.
- In a large mixing bowl, combine the cooked bacon and onion mixture with the eggs, thawed hash browns, cheddar cheese, cottage cheese, and Swiss cheese. Stir until evenly combined.
- Pour the mixture into your prepared baking dish, spreading it out into an even layer.
- Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden and bubbly.
- Allow the casserole to stand for 10 minutes before slicing to serve.
