Ingredients
  

  • 1 pound sliced beef bacon, diced
  • 1 medium sweet onion, chopped
  • 9 large eggs, lightly beaten
  • 4 cups frozen shredded hash brown potatoes, thawed
  • 2 cups shredded Cheddar cheese
  • 1 ½ cups small curd cottage cheese
  • 1 ¼ cups shredded Swiss cheese

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish to prevent sticking.
  2. Heat a large skillet over medium-high heat. Cook the diced beef bacon and chopped onion until the bacon is browned and the onions are soft, about 10 minutes. Drain off excess fat.
  3. In a large mixing bowl, combine the cooked bacon and onion mixture with the eggs, thawed hash browns, cheddar cheese, cottage cheese, and Swiss cheese. Stir until evenly combined.
  4. Pour the mixture into your prepared baking dish, spreading it out into an even layer.
  5. Bake in the preheated oven for 45-50 minutes, or until the eggs are set and the top is golden and bubbly.
  6. Allow the casserole to stand for 10 minutes before slicing to serve.
